An easy, one-pot beef stew with potatoes, carrots, red and green capsicum.

2-3 tbsp EV olive oil
1 onion, finely chopped
2 cloves garlic, crushed
700g beef pieces
2 tbsp Spice Fusion Spanish Spice blend
2 medium carrots, sliced
4 small potatoes, halved (no need to peel)
400g can crushed tomatoes
¼ tsp saffron, crushed (optional)
1 bay leaf
½ green capsicum, cut into large pieces
½ red capsicum, cut into large pieces

Heat oil in heavy-based saucepan or Dutch oven and sauté onion and garlic
until onion is translucent.
Add Spanish Spice and stir well for a minute or two.
Add beef pieces (and more oil, if necessary), cook until brown on all sides, then add
carrots, potatoes, tomatoes, saffron, bay leaf and salt and pepper to taste.
Pour in enough water to just cover the ingredients.
Bring to a boil, turn heat to very low and simmer, lid on, for 60 minutes.
Add capsicum and continue cooking until the beef is tender, another
30 minutes to an hour.
Garnish with parsley.
