This is a dark and authentic blend with the most magnificent aroma. All of the ingredients are dry-roasted individually on the stove top with continual flipping and stirring to keep them from burning. The cumin and coriander are ready when they are dark brown and extremely fragrant. Then everything is left to rest and cool before grinding.
I’ve deliberately left chillies out of the blend so you can add as much or as little heat as you like.
