A staple at many parties in Iran, especially around the time of Persian New Year, these
patties are filling and so easy to make. Serve plain or with a chutney ,or wrap in flat
bread with slices of tomato and gherkins.
115g Panko breadcrumbs
500g minced beef
400g potatoes, cooked, mashed and cooled
½ onion, very finely chopped
Coriander stalks and leaves, finely chopped
2 free-range eggs
2 tsp garlic granules (or crushed fresh garlic)
3 tsp Spice Fusion Persian Advieh
1 tsp salt
Freshly ground black pepper
Vegetable oil
Pour breadcrumbs onto a flat plate and set aside.
Put remaining ingredients, except oil, into a large bowl and mix thoroughly with clean
hands, so that everything is evenly distributed.
Form mixture into patties (about golf ball size) then coat with the breadcrumbs.
Heat oil in frying pan and shallow fry patties in batches until browned well on both sides
and cooked through (6-8 minutes). Drain on paper towel.
