Simple and sweet Thai-style pork mince caramelised with brown sugar.
Serve over rice with a simple salad of tomatoes and cucumber on the side.
2 tbsp peanut oil
½ brown onion, finely chopped
1 tbsp grated ginger
1 tbsp crushed garlic
1 Thai chilli, thinly sliced, plus extra for garnish, optional
500g pork mince
2 tsp Spice Fusion Thai Curry blend
50g dark brown or palm sugar
2 tbsp fish sauce
Heat oil in large frying pan. Add onion, ginger, garlic, and chilli (if using), and sauté until
onion is translucent.
Add pork mince and Thai Curry, breaking up the mince until pork changes colour.
Add the sugar and fish sauce.
Stir well then leave without stirring for around 3 minutes until pork juices have
evaporated and pork is starting to caramelise.
Stir well again, then leave for another minute or so before stirring. Repeat this process
one or more times until the pork has darkened and is caramelised to your liking.
Serve over steamed rice garnished with sliced spring onion and chilli.
Goes well with a simple salad of tomato and cucumber chunks.
