Chicken soup may soothe the soul, but it can sometimes be a bit boring. Add some
Moroccan Spice, corn, carrot, celery and red lentils and you have yourself one tasty
soul-soothing bowl of flavour.
1 tbsp coconut or olive oil
½ red onion, finely chopped
1 tbsp crushed garlic
2 tsp Spice Fusion Moroccan Spice blend
1 free-range chicken breast fillet, cut into strips
4 cups vegetable or chicken stock
1 cup water
Corn kernels from 2 corn cobs
2 medium carrots, thinly sliced
2 sticks celery, diced
¼ cup red lentils
Parsley or coriander leaves
Heat oil in large saucepan, add onion, garlic and Moroccan Spice blend and sauté,
stirring, for about 2 minutes.
Add stock, water, chicken, corn, carrot, celery and lentils.
Bring to the boil on medium heat, then turn down heat and simmer gently for 15 minutes.
Serve with a garnish of chopped parsley or coriander leaves.
