Piri Piri spice with extra chillies, onion, garlic, chorizo, tomatoes and kidney beans. What a
2 tbsp olive oil
1 large red onion, thinly sliced
1 large garlic clove, crushed
2 or more bird’s eye chilli, thinly sliced
2-3 chorizo or other spicy sausage, diced or sliced
1 tbsp or more Spice Fusion Piri Piri
2 cans diced tomatoes
2 cans kidney beans, drained and rinsed thoroughly
Coriander or parsley leaves to garnish
Heat the oil in a frying pan or saucepan, then sauté onion for about 5 minutes or until
golden brown and caramelised.
Add the garlic, chillies, chorizo and Piri Piri and stir well.
Add tomatoes and beans, cover with a lid and simmer on low heat for 15 minutes.
Garnish with coriander or parsley.
Serve with warmed pita bread and steamed rice.
