Vegetables mixed into a batter of Spanish Spice blend, besan flour, salt and water, then fried
until golden. Serve with salad for a light meal or as a side dish.
¾-1 cup besan (chickpea) or plain flour
½-¾ cup water
1 tbsp Spice Fusion Spanish Spice blend
½ teaspoon salt
¼ cup chopped red onion
1½ cups red and yellow capsicums, finely chopped
2 tbsp chopped parsley
2 tbsp vegetable oil
Sieve dry ingredients into bowl, add water and whisk until smooth. Batter should be reasonably thick.
Fold vegetables into the batter.
Heat oil in frying pan until very hot.
Drop spoonfuls of batter into the pan and cook until browned and crisp on both sides.
