This is a quick and easy meal of baked fish flavoured with my smoky Spanish Spice.
Serve with steamed potatoes and green beans.
4 garlic cloves, unpeeled
2 red onions, cut into wedges
4 Roma tomatoes, halved
4 fillets of fish (I used Rockling)
1 tbsp Spice Fusion Spanish Spice blend
Extra virgin olive oil
Salt & black pepper
Chopped parsley
Zest of 1 lemon
Preheat oven to 180°C.
Scatter the onion wedges, garlic cloves, tomatoes and fish into a lightly oiled baking dish.
Make a thick paste with the Spanish Spice and some oil, then brush over the fish fillets.
Season with salt and pepper and drizzle some oil over the fish and vegetables.
Bake for 25-30 minutes or until the fish is just cooked and the tomatoes are tender.
Squeeze the garlic from its skin, then sprinkle over parsley and lemon zest.
