Zucchini, carrot and eggplant coated in spicy Piri Piri is then fried with spicy sausage and
tomatoes. And if that’s s not hot enough for you, add some fresh chillies!
About 500g (3-4 cups) diced vegetables
(e.g. zucchini, carrot, eggplant)
1 small onion, finely chopped
1 garlic clove, crushed
5cm ginger, cut into slivers
2 tbsp olive oil
1-2 tbsp Spice Fusion Piri Piri
Olive oil spray
500g spicy sausage, e.g. chorizo, merguez or bratwurst, sliced or cubed
2 cups tomato pieces (fresh or canned)
3 tbsp chopped parsley or coriander
Finely sliced chillies
Place the vegetables, garlic, ginger, olive oil and Piri Piri into a glass bowl.
Stir well so that all of the vegetables are coated in the spice. Set aside.
Heat a frying pan and spray with olive oil spray, then brown sausages on all sides; remove from pan.
Add vegetable mixture to pan with tomatoes and stir well.
Simmer, lid on, for 10 minutes, then add the sausage and cook for another 5 minutes or more,
until all of the vegetables are cooked through.
Garnish with the parsley or coriander and chillies.
