Pumpkin, potato, capsicum and kidney beans go together so well. Add some hot and spicy Piri
Piri, melted bocconcini balls and fresh basil and you have an absolutely delicious and
healthy one-pot meal.
2 tbsp olive oil
2 tsp butter
1 red onion, thinly sliced
2 large garlic cloves, crushed
2 tbsp grated ginger
1 or more tbsp Spice Fusion Piri Piri
2 cups butternut pumpkin, diced
2 cups potatoes, diced
2 medium red capsicum, diced
1 can diced tomatoes
1 cup water
salt and pepper
2 cans kidney beans, drained and rinsed well
Bocconcini balls
Loads of basil
Heat the oil and butter in a frying pan or saucepan and sauté onion until browned, 5 minutes; stir through
garlic and ginger, add Piri Piri and fry off for 30 seconds.
Add potatoes and pumpkin, tomatoes and water and season with salt and pepper to taste.
Cook for 15 minutes, add kidney beans and bocconcini balls and heat for a further
8-10 minutes or until bocconcini has melted slightly.
Serve with torn basil leaves.
