Piri Piri adds heat and flavour to just about everything, even pizzas! In this recipe, pork pieces
are coated with Piri Piri and then fried with chopped apple and garlic. This topping is then
layered over a tomato base with lots of mozzarella and spring (green) onions.
1 tbsp butter
300g pork fillet
4 spring onions, sliced
2 cloves garlic, finely chopped
Tomato Passata
2 tsp Spice Fusion Piri Piri
2 Granny Smith apples, peeled, cored and thinly sliced
1 cup mozzarella, grated
2 small or 1 large pita bread or pizza base or make your own (see below)
Preheat oven (and baking tray or pizza stone) to 245°C for 30 minutes.
Rub Piri Piri all over pork then cut into small cubes.
Heat butter in frying pan, add pork, garlic and apple, and sauté until pork is browned all over.
Brush pizza base with tomato passata, sprinkle over half of the mozzarella, then pork and apple
mixture, spring onion and remaining mozzarella.
Bake for 10-15 minutes or until cheese has melted.
SUPER EASY PIZZA DOUGH
2 cups plain flour
1 x 8g sachet dry yeast
1 tsp caster sugar
½ teaspoon salt
2 tbsp olive oil
¾ cup water
Combine dry ingredients in large mixing bowl (or food processor) and add water and oil.
Mix to soft dough. Knead on floured surface until soft and pliable.
Return to mixing bowl and cover with cling wrap and leave in a warm spot for 30 minutes.
When it has risen to double in size, punch the dough once to remove air bubbles.
Remove from bowl and knead gently for a minute.
Roll the dough out to desired size.
