A hot and spicy Madras Chicken Pizza like this isn’t available from your local takeaway; a pizza
of this calibre definitely has to be made at home!
2 small or 1 large pizza base
2-3 tbsp of your favourite chutney
1 tbsp olive oil
½ red onion, thinly sliced
1 large clove garlic, crushed
2 free-range chicken breast fillets, cut into strips
2 tsp Spice Fusion Madras Curry blend
Shredded mozzarella cheese
Chopped coriander or parsley leaves
Preheat oven to 230°C
Heat oil in a frying pan or wok and sauté onion until softened, add garlic, chicken and
Madras Curry blend and stir fry for a couple of minutes.
Brush chutney over bases then top with chicken mixture, cheese and chopped chillies.
Bake on pre-heated pizza stone or oven slide for 15 minutes or until cheese has melted.
Sprinkle over coriander or parsley.
