Spice up your burgers with Madras Curry blend. This simple recipe for Chicken Burgers is taken
from ordinary to extraordinary simply by adding a blend of spices known as Madras Spice
blend. Add some garlic yoghurt and it’s happy days!
500g chicken mince
1½-2 tbsp Spice Fusion Madras Curry blend
2 spring onions, thinly sliced
1 egg, lightly beaten
½ cup breadcrumbs
¾ cup chopped Italian flat-leaf parsley, divided
Salt and pepper to taste
Extra virgin olive oil spray
GARLIC YOGHURT
1 tsp crushed garlic
½ tsp salt
1 cup Greek-style yoghurt
1 tbsp lemon juice
Combine the chicken mince, Madras Curry blend, spring onions, egg, ½ cup of the parsley, breadcrumbs
and the salt and pepper in a bowl and mix well.
Using clean hands, shape the mixture into four 3 cm thick patties.
Place on a plate, cover with cling film and refrigerate for 20 minutes.
Lightly spray patties with oil and cook in a frying pan for 5 minutes each side or
until cooked through.
Serve in toasted buns with tomato, capsicum, chopped parsley and a dollop of garlic yoghurt.
GARLIC YOGHURT: Mix all ingredients together.
