This hearty tomato-based soup is full of the tasty goodness of vegetables and pearl
barley with a blend of spices by the name of African Vegie Curry that
complements vegetables like no other!
½ cup pearl barley
1 tbsp olive oil
1 onion, finely chopped
1 large or 2 small cloves garlic, crushed
1 tbsp grated ginger
1 tbsp Spice Fusion African Vegie Curry
3-4 cups chopped vegetables,
e.g. carrot, celery, beans, zucchini, potato, sweet potato
1 can tomatoes, diced
4 cups vegetable or chicken stock
1 cup water
Salt and black pepper, to taste
Soak barley in water for at least 30 minutes.
Heat oil in a large heavy-based saucepan and sauté onion, garlic and ginger until onion has softened.
Add African Vegie Curry and cook for about 30 seconds, stirring constantly.
Add vegetables and cook for 2-3 minutes, stirring well to coat with onion mixture.
Add tomatoes, stock and water.
Cover and bring soup to the boil, then decrease heat and simmer for about 40 minutes until
barley and vegetables are cooked.
Season with salt and black pepper. Serve with chopped parsley.
