Colourful skewers of marinated chicken, halloumi cheese, capsicum, cherry
tomatoes and red onion with an authentic blend of Greek
herbs and spices.
1/3 cup lemon juice
¼ cup olive oil
2-3 large garlic cloves, crushed
1-2 tbsp Spice Fusion Greek Seasoning
½ tsp salt or to taste
1 red or green capsicum, cut into chunks
Red onion, cut into wedges
Salt & black pepper
fresh mint for garnish
Combine chicken, lemon juice, olive oil, garlic, Greek Seasoning, salt and pepper and mix
well; set aside at room temperature to marinate.
Preheat grill and line an oven tray with foil or baking paper.
Thread the marinated chicken, halloumi and vegetables onto skewers. Pour any
remaining marinade over skewers and spray lightly with olive oil spray.
Grill for about 6-10 minutes, turning at least once. The cheese and vegies will be ready
when they have charred a little and have slightly softened.
Serve souvlaki with warm pita and tzatziki or garlic yoghurt and garnish
with chopped mint.
