Rustle up a salad and serve alongside these delicious parcels of fish with Chimichurri sauce
and you have yourself and your family a quick, easy and healthy meal.
Spice Fusion Chimichurri Verde
Fresh lime or lemon juice
EV olive oil
Fish fillets, steaks (or whole fish)
spring onions, thinly sliced
Preheat oven to 180°C.
Place fish on pieces of foil large enough to wrap each piece individually.
Mix equal parts of Chimichurri, juice and oil in a bowl (about 1 tablespoon of each per person),
add a sprinkle of salt then spoon liberally over each piece of fish sprinkle over some of the spring onion
and seal the parcels; set aside to marinate while preparing the rest of the meal.
Place parcels on an oven tray and cook for about 15 minutes or until cooked through.
