Pasta with a tomato-based sauce of spicy chorizo sausage, red capsicum
and Louisiana Cajun Spice; a flavour combination made in heaven.
250g curly fettuccine or your favourite pasta
1 tbsp olive oil
1 red onion, thinly sliced
1 large or 2 medium chorizo sausages (about 250g)
1 red capsicum, diced (optional)
1 cup tomato pieces
½ cup white wine or water
1 tbsp Spice Fusion Cajun Spice blend
½ tsp coarsely ground black pepper
Chopped parsley to garnish
Cook pasta according to packet instructions.
Meanwhile, heat oil in saucepan and sauté onions and chorizo until
onion has softened.
Add tomato pieces, wine, Louisiana Cajun Spice blend and black pepper;
bring to the boil and then simmer, uncovered, for 15 minutes.
Spoon sauce over pasta and sprinkle over chopped parsley.
