A scrumptious dish of buttery and garlicky Cajun-spiced prawns with cooked rice, capsicum
and parsley served with a fresh, tangy mango salsa on the side.
1 heaped tbsp Spice Fusion Louisiana Cajun Spice blend
500g green prawns, peeled
1 tbsp olive oil
1 tbsp butter
2 cloves garlic, crushed
Italian parsley, chopped
½ green capsicum, cut into small dice
2 cups cooked rice
Sprinkle Louisiana Cajun Spice blend over prawns and set aside for 30 minutes.
Heat oil and butter, add garlic and cook for a few seconds, add prawns and sauté for 5 minutes or until cooked.
Add rice, capsicum and parsley, heat through and serve with mango salsa on the side.
MANGO SALSA
2 mangoes, flesh chopped into cubes
1 spring onion, finely sliced or ¼ red onion, finely chopped
½ red capsicum, diced
2 tbsp lime or lemon juice
Mix all ingredients together.
