Chickpeas, corn, red capsicum and ginger combined with the spiciness of Louisiana
Cajun Spice and the freshness of coriander and mint leaves. Serve with your favourite
chilli sauce or relish.
2 cans chickpeas, drained and rinsed thoroughly
½ cup coriander leaves
½ cup mint leaves
1 tbsp chopped ginger
Chopped chillies to taste
1 tbsp Spice Fusion Louisiana Cajun Spice blend
1 tsp salt
1 tsp cracked black pepper
2/3 cup fresh or frozen corn kernels
2 cups fresh breadcrumbs
1 egg, lightly beaten
Red capsicum
Oil for shallow frying
Combine chickpeas, coriander, mint, ginger, chillies, Louisiana Cajun Spice blend in a food processor.
Pulse until coarsely chopped.
Add corn and pulse a little more until corn is slightly broken; transfer mixture to a bowl.
Add egg, breadcrumbs and capsicum and mix well.
Form mixture into patties.
Heat oil in frying pan and pan-fry patties 2-3 minutes on each until golden brown and cooked through.
Serve with tomato relish.
