Such a wonderful combination of flavours with pan-fried chicken breast fillets coated in
Louisiana Cajun Spice, topped with the freshness of tomato, corn and red onion with lime
juice and balsamic vinegar.
750g chicken breast or thigh fillets
1-1½ tbsp Spice Fusion Louisiana Cajun Spice blend
2 tbsp EV olive oil
2 tsp lime or lemon zest
1 cup sweet corn kernels (frozen or fresh)
½ small red onion, finely chopped or cut into wedges
TOMATO SALSA
2-3 Roma tomatoes, diced
2 spring onions (scallions/green onions), thinly sliced
1 tbsp lime or lemon juice
1 tbsp balsamic vinegar
Chopped mint & coriander
Rub Louisiana Cajun Spice blend all over chicken pieces; cover and set aside for 30 minutes
or longer, if possible.
Heat 2 tbsp oil in pan and shallow fry chicken until cooked through, turning once.
Remove from pan and cut into slices.
Reheat remaining oil in pan and sauté onion, corn and lime rind until onion is soft.
Serve chicken topped with tomato salsa.
Tomato Salsa: Combine all ingredients and mix well.
