A super easy and delicious dish of pork tenderloin cooked in coconut milk and flavoured
with a beautifully balanced blend of spices and aromatics.
500g pork tenderloin, cut into cubes
2 tbsp Spice Fusion Thai Curry blend
2½ tsp grated ginger
1 medium onion, finely chopped
2 cloves garlic, minced
½ tsp chilli powder, optional
1¼ tsp Thai shrimp paste
2 tsp brown sugar
3 tsp grated lemon rind
2 x 240g cans (Ayam) coconut milk
Place all ingredients into saucepan, stir well and gradually bring to the boil.
Reduce heat and simmer until pork is tender.
Serve with Jasmine rice and chopped coriander, parsley or Thai basil.
