Layers of sweet potato, onion and apple are sprinkled with Singapore Curry blend and brown
sugar, then the pork chops are placed on top. Oh so easy and oh so delicious!
4 pork loin chops (or pork pieces)
1 large sweet potato, peeled and sliced
1 tbsp butter or margarine
2 cooking apples, peeled, quartered, cored and sliced
2 onions, thinly sliced
1-2 tbsp Spice Fusion Singapore Curry blend, divided
2 tsp brown sugar
Salt and black pepper
Juice of a lemon
4 tbsp water
Preheat oven to 180°C.
Remove the fat from the chops and sprinkle with 1-2 tsp Singapore Curry blend; set aside.
Grease baking dish or casserole, then add sweet potato, onion and apple in layers.
Sprinkle over remaining Singapore Curry blend and brown sugar and season with salt and black pepper.
Place chops on top, then pour in the lemon juice and water.
Cover the dish and bake for about 40 minutes or until chops are tender.
