Am I showing my age with this recipe? Being brought up in a meat and 3 veg family, my diet is
slightly different these days! But if I want to remember my heritage, this is what I’d turn to. Good
old-fashioned curried sausages with creamy mashed potato.
600g thick sausages
1 tbsp peanut or vegetable oil
1 onion, chopped
2 tsp Spice Fusion Hurry Curry
1 cup (250ml) beef stock
½ can diced tomatoes
1 cup peeled and diced apple
1 cup (150g) frozen peas
½ cup sultanas
Place sausages in a large saucepan and cover with cold water. Bring water to the boil, then
simmer for 2 minutes, drain, and cut into chunks.
Heat oil in large saucepan or frying pan, sauté onion until translucent.
Add Hurry Curry, and cook 1 minute or until fragrant.
Add sausages, stir to coat with the onion mixture.
Add stock, apple and tomatoes; simmer, uncovered, for about 10 minutes or until
thickened slightly.
Stir in peas and sultanas and cook a further 5 minutes until heated through.
