A delicious vegan replacement for bolognese sauce. Serve with your favourite pasta
including lasagne, as a filling for pancakes or tortillas, or as a sauce with vegetables.
1 onion, finely chopped
2 garlic cloves, crushed
2 tsp Spice Fusion African Vegie Curry blend
2 med carrots, coarsely grated
2 celery stalks, chopped
2 tbsp EV olive oil
1 cup red lentils
1 can cherry tomatoes
2 tbsp tomato paste
2 cups vegetable stock
Chopped herbs (e.g. coriander, parsley, basil, chervil).
Heat oil in a large saucepan, add African Vegie Curry and stir for 30 seconds.
Add onion, garlic, carrots and celery and sauté until soft, about 5 minutes.
Add lentils, tomatoes, tomato paste and stock.
Bring to a boil then simmer, partially covered, for 15-20 minutes until thick.
(Remove lid if not thickening fast enough.)
Sprinkle over chopped herbs or stir in just before serving.
