Mie Goreng or fried noodles is a delicious “anytime” dish with many variations. So, use your
imagination and replace the egg noodles with rice noodles, the chicken with vegetables, meat
or tofu and whatever else takes your fancy. Just make sure you include Spice Fusion’s
Indonesian Curry blend and kecap manis!
2 tbsp peanut oil
1 onion, thinly sliced
3 garlic cloves, crushed
2 tbsp grated ginger
1 tbsp Spice Fusion Indonesian Curry blend
2 free-range chicken breast fillets, chopped into cubes
2 bunches Pak Choy, roughly chopped
400g fresh egg noodles
½ cup water
4 tbsp kecap manis (Indonesian sweet soy)
Chopped chillies (optional)
Fried shallots* and coriander leaves to garnish
Prepare noodles according to packet instructions.
Heat oil in wok, add onion, garlic and ginger and stir-fry until onion is transparent.
Add Indonesian Curry blend and cook until fragrant, stirring constantly.
Add chicken and stir-fry for a couple of minutes until chicken is cooked.
Add Pak Choy and cook until wilted.
Add water and kecap manis and stir-fry for a minute or two longer to heat through.
Garnish with chillies, if using, fried shallots and coriander.
*Fried shallots are available at Asian grocers or you can make your own.
